Chefs Brigade was excited to take part in the annual “Cookoff for the Coast” held on a beautiful spring day in late February at Docville Farms. The event was packed with people from across the metro area, who were treated to delicious seafood or game dishes prepared by teams competing for crowd favorite; live music from the likes of Louis Michot, co-founder of the Grammy Award Winning Lost Bayou Ramblers, and numerous nonprofits who there to talk about coastal restoration efforts and their work.
For our part, we sponsored a cooking demonstration by one of our CB partners, New Orleans Chef/Restaurateur Dana Honn from Carmo. He prepared a Haitian Creole shrimp dish, Enchilado de Camarones, which is the basis for our Louisiana Shrimp Creole, and it was a lively demonstration with Chef Dana skillfully preparing the recipe while keeping the crowd informed about the various techniques and ingredients.
And the final product? An explosion of flavor and something the attendees will long remember.
